I love Italian food, and I especially love eating at Italian restaurants. Fortunately for me, my husband loves Italian food too. Of course, in order for me to make a dinner that has authentic Italian flavors, I would need to spend a good amount of time in the kitchen… which you know I do not like!
Mexican food is a favorite at our house. In fact, I make tacos or quesadillas a few times a month because both my husband and I love them, and they are so easy to make—you know I am all about easy recipes! Ground beef and shredded chicken are my go-to proteins for quesadillas, but recently I decided to shake things up a bit.
I have never been one to make recipes with 20 ingredients and spend hours in the kitchen. It just isn’t me, and when I got married, surprisingly, I didn’t suddenly turn into an excellent cook who loves grocery shopping and baking. Who knew that you didn’t turn into Betty Crocker once the wedding band went on and you said ‘I do’? It just doesn’t work that way. This is why when you take a look at my recipes, you will see that many of them have the word ‘easy’ or ‘simple’ in it – because they are! Easy dinner recipes keep me from ordering out for dinner every night or resorting to cereal for dinner.
