When I first heard of black bean brownies, I thought “I am never going to try them!” I couldn’t imagine that you could use black beans in a sweet recipe. I was picturing brownies with a Mexican flare, and it wasn’t a pretty picture. So how did I end up making these brownies? A dare. Yep, a good old-fashioned “triple dog dare ya” got me to try out this recipe. And I’m glad I did!
No bake black bean brownies
I adapted this recipe from The Big Man’s World black bean brownie recipe. If you haven’t been to his site, you should check it out. He has some great recipes that are healthy and delicious. The fact that he had a brownie recipe with black beans made me feel a bit better about trying them out.
I’m not a fan of almond butter, so I made mine with peanut butter, but you could really use any nut butter you like. After you’ve added the coconut flour, your mixture may be crumbly like mine. If this is the case, you will need to add some milk. If you have the opposite problem and the mixture is too soupy, slowly add in coconut flour until incorporated.

They turned out to be quite delicious. However, the peanut butter overpowered the cocoa flavor. This is fine in my book because I love chocolate and peanut butter. If you want it to be more chocolatey, just add more cocoa to the mix. These will keep nicely in the refrigerator until they’re gone.
No need to take huge brownies with these. They are dense like fudge, so a little square will do the trick. These will keep nicely in the refrigerator until they’re gone.
