Since the beginning of the year, I have been following a low carb ketogenic diet and it has been going pretty well. I have lost 15 pounds and have kept it off for a few months now. As with any diet, it definitely takes some getting used to. When I first started out, one of the hardest things for me to give up was milk (especially chocolate milk). Did you know that one cup of whole milk has about 12 grams of carbs and 12 grams of sugar? This definitely means that milk is not a keto friendly drink!

About a year ago, I decided to try eating more real food and work in organic fruits and vegetables when possible. I’m not a strict “clean eater” by any means, but I have been enjoying making more of my own recipes and buying less processed store-bought food. When I first started doing this, Dan agreed but was definitely a bit hesitant.
One week until Halloween! Do you have your costume picked out? Are you and your spouse dressing up together or did you each pick your own fun outfit to celebrate the day? This year, my husband and I don’t have any costumes. No Halloween parties to attend and I’m not sure if we will be getting any trick-or-treaters. Of course, that doesn’t mean that we can’t enjoy the holiday! We will be watching a scary movie, munching on yummy candy and drinking these Pomegranate S’Cream Sodas – a bloody good treat!

It is funny how food can bring back memories. When I think about summers growing up, I remember ice pops that turned my mouth strange colors and nibbling on those little candy dots attached to a paper strip. You know the ones I’m talking about? You’d bite them off and end up swallowing scraps of paper in the process. But most of all, I think of s’mores. The taste of chocolate and marshmallow always reminds me of summers at my grandparents’ cabin in the Poconos.

For a special treat, I will make something more than coffee and Dan and I will eat breakfast in the sunroom. We open all of the windows and enjoy the breeze while we eat. Recently I made these awesome grain-free waffles for breakfast in the sunroom. I like making waffles during the warm weather because it doesn’t involve sweating over a hot stove.
